- 2 large eggs
- 3 large egg whites
- 1 cup buttermilk
- 2 tablespoons of oil
- 2 teaspoons of vanilla
- 1 1/2 cups sugar
- 2 1/4 cups cake flour
- 1 tablespoon leaven
- 3/4 teaspoon salt
- 1 cup unsalted butter (softened and cubed)
Vanilla buttercream frosting:
- 1 cup butter (softened)
- 4 ounces cheese (softened)
- 4 cups castor sugar
- 2 teaspoons of vanilla paste or vanilla pod
- 1 tablespoon of cream or milk (optional)
Instructions
- Preheat the oven to 350 degrees.
- In a small bowl, whisk together eggs, buttermilk, oil and vanilla.
- In a stand mixer, combine the flour, sugar, leaven and salt.
- Beat the butter within the flour mixture, one cube at a time. Keep beating until it's like coarse crumbs.
- Add 1/2 of the egg-milk mixture and beat the dough is light and soft. Add the remainder of the egg-milk mixture and blend until everything is well mixed.
- Lightly spray two 8 or 9 inch cake pans with nonstick cooking spray. Pour the batter evenly between the cake pans. Bake for 20 to 24 minutes, counting on the depth of the cake pans. Remove the cakes from the oven when the toothpick or cake tester comes out clean. Let cool before removing from pans.
- Vanilla buttercream frosting:
- In a bowl, combine the butter and cheese for 4 minutes.
- Add the granulated sugar and beat for two more minutes. Add vanilla and milk (if necessary).
