Chocolate Sugar Cookies
INGREDIENTS
- 1 cup butter (2 sticks), softened
- 2 cups dark brown sugar (420 grams)
- 2 tablespoons vanilla extract
- 2 eggs
- 1-2 / 3 cups all-purpose flour (200 grams)
- 1-1 / 4 cup unsweetened cocoa powder (100 grams)
- 3/4 teaspoon salt
- 1 teaspoon of baking soda
- 1/2 teaspoon baking powder
CHOCOLATE SUGAR TRIM:
- 1/2 cup granulated sugar (100 grams)
- 2 teaspoons of cocoa powder
INSTRUCTIONS
- Preheat the oven to 350 ° F and line a baking sheet with parchment paper.
- Place the butter, brown sugar and vanilla in a large mixing bowl and beat until smooth and creamy. Beat the eggs.
- Sift the flour, cocoa powder, salt, baking soda and baking powder over the butter mixture and stir until just combined.
- In another bowl or pie dish, combine the sugar and cocoa powder.
- Take 3 tablespoons of dough at a time (or use a large cookie dough spoon) and roll it into balls. Roll the balls in the sugar mixture then place them on the baking sheet. Make sure to leave 2 inches of space between cookies. Push cookies flat to about 1/3 of an inch thick.
- Bake for 10 to 14 minutes. They swell slightly, crack and appear moist in the cracks. Do not cook them any longer or they will not be soft and chewy.
