Best Paleo Avocado Chocolate Cake



INGREDIENTS

cake

  • 2 cups chopped raw sweet potato
  • 2 large eggs
  • 3/4 cup black cocoa powder
  • 1/2 cup maple syrup
  • 1/2 cup coconut sugar
  • 1/2 cup coconut oil
  • 1/4 cup coconut flour
  • 1 tablespoon vanilla
  • 2 teaspoons of yeast
  • 1/2 teaspoon sea salt or more salt to taste


Icing

  • 1 1/2 cups sweet potato puree see notes on preparation
  • 1/2 cup avocado
  • 1 cup pitted medjool dates
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt


INSTRUCTIONS

  • Preheat the oven to 350F. Line the bottom of two 6-inch spring cake pans with parchment paper slices.
  • In a food processor, chop the sweet potato. Then, in a blender, combine all the ingredients for the cake until smooth.
  • Divide the dough between the two cake pans. Bake at 350 ° F for 45 to 50 minutes, then refrigerate in the freezer while you are icing.
  • For the frosting, steam the sweet potato cubes, then drain the water and mix with the rest of the frosting ingredients until smooth (about 5 minutes). Refrigerate until frozen.
